1 cup evaporated cane juice (or 1 cup honey)
½ cup soy milk
½ cup vegan non-hydrogenated butter
½ cup natural peanut butter
½ cup carob chips
½ cup unsweetened coconut
3 cups old fashioned oats
Combine evaporated cane juice, soy milk, butter, and natural peanut butter. Cook and bring to a boil. Stir constantly for one minute (or longer). Take off burner. Add carob, vanilla, and oats. Mix well. Spoon onto waxed paper or tin foil and let set until cool.
